Papalo Salad
3 cups mesclun greens
1 cup chopped papalo leaves
1 ripe avocado
4 slices tomato cut in half
1/2 cup papalo vinaigrette
Papalo Vinaigrette
1/3 cup virgin olive oil
Juice of 1/2 lime
1/4 cup finely chopped papalo leaves
1/4 tsp. sugar
1/4 tsp. salt
1/2 tsp. dijon mustard
Fresh ground pepper to taste

Mix the mesclun greens and papalo leaves.
Dress with the vinaigrette.
Garnish the salad with the halved tomato slices
and 8 slices of ripe avocado.
